I think in a hydraulic system height difference is more important than the weight (not density) of the liquid. You can balance a very
huge volume of water on one side with almost negligible volume of water on the other side provided height is equal which is the principle used in hydraulic press.

The lift in water level in the tube is going to be related to the resistance of the air flow out of the jar resisting the increase in height of the water in the jar,, keeping it slightly lower than the water level in the tube,, until the pressure equalizes.


When the tube is pulled towards the jar, a very huge force is developed inside the jar because its surface area is far more than that of tube
and air has to be pushed out with a huge force. The reactive force of  air acts on the surface of water, not on your hand pulling the tube.
Hence any difference in weight  due to gravity force should be negligible  compared to force developed due to difference in surface area and height.
 
It is a bit confusing for me, don't know exactly.

I don't see any point in making two jars of equal size.  In that case the idea of hydraulic press itself will be lost.  Even if the displacement of water is less, it can produce considerable energy because the column is oscillating and force generated in bigger jar is very high.
